We believe the center of gravity for the food chain will soon revolve around one critically important factor: nutrient density. For Jackson's Honest, the goal of nutrient density is simple to define: pack the most traditionally nourishing fats, proteins, and carbohydrates into food as possible. This means coconut oil not canola oil; maple sugar instead of high fructose corn syrup; butter instead of margarine. Ancestrally important foods are the foods of the future; they worked for millennia in meeting the nutritional and metabolic demands of our ancestors. We think they can work just as well for our bodies in a modern day environment. This is why we choose coconut oil: nature's most potent source of lauric acid - a unique medium chain fatty acid with myriad beneficial properties for our bodies. It is why we choose heirloom varieties of potatoes and corn that represent thousands of years of genetic crop heritage. It is why we choose unrefined sea salt and Real Salt brand sea salts: the trace minerals and micronutrients add another layer of nutrition to the chips. In all of these ways and more we are dedicated to developing and making our products revolve around this critical keystone: it served our son and the rest of our kids' needs well and we hope it serves you also.

Non-GMO Potatoes

The most universally grown vegetable in the world, potatoes rank as one of civilization’s most important foods. The Inca peoples of Peru were growing potatoes in the Andes Mountains more than 7,000 years ago, and the genetic heritage of this root vegetable is vast: around the world more than 4,000 potato varieties are in cultivation. When cooked with our ‘low and slow’ method in organic coconut oil and dashed with sea salt, this humble, utilitarian root vegetable takes on a whole new depth. We use Organic and/or heirloom Non-GMO varieties of potatoes for each of our chips; not only are they better for the farmer and for you, when married to our low-and-slow coconut oil cooking method, customers tell us they can actually taste potato in our potato chips, making them more like a food than a snack.

Organic Corn

Our USDA Organic, Non-GMO Project Verified corn is grown by farmers who care about the shared resources of our land and water but also want to protect and preserve the genetic heritage of heritage corn varieties by exclusively using Non-GMO verified corn. And just like the ancient Mayans, we stone grind our corn using volcanic rock so that the Masa retains its hearty feel and flavor. We had to invent a proprietary low-and-slow cooking method to produce the world's first coconut oil potato chip: well, we had to do the same for making the world's first organic coconut oil tortilla chip. This low and slow cooking process unlocks the taste and nutrition in the corn; you can tell they are different from any other tortilla chip you've ever tried by the smell of the bag and the taste of each chip.

Real Salt

Real Salt® brand sea salt comes from an ancient sea bed in Central Utah, where for more than 30 years the good folks at Redmond Trading have delivered completely natural sea salt: nothing added, nothing taken away. That means you get more than 60 trace minerals in a delicious, healthy salt that is never chemically treated, bleached, or kiln dried that delivers a unique taste that make our Tortilla chips the best you'll find anywhere. Proprietary Process

The biggest challenge to producing the original coconut oil potato and tortilla chips was overcoming the unique physical and chemical properties of coconut oil while maintaining the nutritional benefits resident in the coconut oil, potatoes, and corn. Coconut oil’s super saturation (93% saturated) makes it solid at room temperature, which makes moving large amounts of it to and from a fryer difficult. Additionally, in order to keep the molecular structure of the MCTs (medium chain triglycerides like lauric acid) contained in coconut oil intact and nutritionally available, we had to use significantly lower temperatures. In sum, we invented an entirely new cooking process that can best be described as ‘low and slow’. Taking our time and using low-temperature frying, our proprietary process keeps intact the nutritional profile and taste of the coconut oil and the heirloom corn and potato varieties we use. A large majority of our customers remark about how much our potato chips taste like potatoes and how much our tortilla chips taste like corn: this is the direct result of the year-long effort we undertook to find a way to make these potato chips and tortilla chips have the best taste and nutrition available.
