How to make the Strawberry Salsa:
Finely chopped mint (just a bit)
Lemon juice from one lemon wedge

Mix it all up. Best if you let this sit for a little while.
Top layer of canned coconut milk
Whip this up with a fork until its nice and smooth. It will harden up in the fridge, but you can whip it up again before adding the dollop on top of your nachos.
1T melted coconut
1 1/2 T cocoa powder
Melt the coconut oil at a low temperature on the stovetop. Remove from heat and add cocoa pow, vanilla and honey. If the sauce is too thin, place in fridge for a few minutes to harden up. Every chef knows; its the sauce that makes the dish.
